Tha Aviation dates back to the 1910’s and the early days of manned flight. By the 1930’s it was one of the most popular cocktails in the US. The recent increase in availability of Marichino liqueur has rekindled interest in this classic cocktail.

Marichino is a clear, dry liqueuer flavored with cherries grown in northern Italy. Both the fruit and the pits of the cherry are used and the pits lend a almond-like flavor to the finished product. Cherries were once shipped in Marichino liqueur as a preservative, but the modern Marichino cherry is related only in name.

The blue hue of the drink pictured is the result of using Magellan gin, which is infused with Iris root.

Maraschino liqueur
1/4 oz
Fresh squeezed lemon juice

Shake with ice and strain into a cocktail glass.
