Basmati Rice
BASMATI RICE
Serves 6.
3 c Basmati rice, unrinsed and unwashed.
3 tbsp vegetable oil
3 tsp Kosher salt, or 1.5 tsp table salt
4.5 c water
Add salt to water and set aside.
Heat oil until almost smoking in a large pot with a tight sealning
lid. Add rice and stir until fragrent, about 3 minutes.
Add water to rice and bring to a boil. Reduce heat to a simmer and
cover tightly. Cook until water has been absorbed, 15-17 minutes.
Remove from heat and let stand, covered for at least 10 minutes,
up to 20. Fluff with fork and serve.
