Chick Peas and Swiss Chard
CHICK PEAS AND SWISS CHARD
Serves 4 as a side.
1 med onion, thinly sliced
2 garlic clove, thinly sliced
3 tbs olive oil
1 14 oz can diced tomatos, drained
1 14 oz can chick peas, drained and rinsed
1 lb Swiss chard, stems finely sliced and leaves coarsely chopped
1 tbs fresh lemon juice
1 tsp red pepper flakes
Cook onion, chard stems and garlic in oil in a large nonstick skillet
over medium heat, stirring, until starting to turn golden. Add red
pepper flakes and cook 30 seconds, stirring. Add tomato and chick
peas and cook, stirring, 5 minutes. Add chard leaves and cook,
covered, until wilted, about 2 minutes. Add lemon juice and season
with salt and pepper.
Serve over rice for a main course.
