Coffee Cake Muffins
COFFEE CAKE MUFFINS
Makes 9-12 muffins.
1/2 c white sugar
1/4 tsp kosher salt, or 1 pinch table salt
2 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
4 tbs butter, melted
2 eggs
1 c plain lowfat yogurt
1 tsp vanilla
1 ripe bananna, mashed -or- 1/2 c apple sauce
Filling/topping:
1/4 c brown sugar
1/2 tsp cinnamon
1/4 c chopped pecans (optional)
Preheat oven to 400.
Mix filling/topping ingredients together and set aside.
Mix remaining dry ingredients together. Mix all wet ingredients
together then combine with dry ingredients with a wooden spoon,
mixing until just combined. Spoon 1 tspn batter into lined muffin
cups, then add 1 tsp filling to each cup. Add remaining batter and
top with remaining filling.
Bake as soon as possible for 20 minutes.
