Pasta with Garlic and Oil

PASTA WITH GARLIC AND OIL Serves 4. 1 lb spaghetti, linguine, or bucatini 1/3 c olive oil 1/4 c pressed garlic, from apporx 20 medium cloves 2 tsp lemon juice 1/2 tsp red pepper flakes salt grated parmesan (optional) 2 tbsp chopped fresh parsley (optional) While waiting for pasta water to boil, peel and press the garlic. When water boils add the pasta. Add 1/2 of the oil and all but 1tbsp of garlic to a large skillet over medium-low heat. Striring frequently, cook the garlic until is becomes a sticky mass, about 8-10 minutes. When garlic begins to brown add the pepper flakes and cook for the last 1-2 minutes with the garlic. Remove from heat, add the remaining oil, garlic, lemon juice, 2 tbs of pasta water and approx 1tspn kosher salt (or more to taste). Add garlic mixture and parsley to pasta and serve immediately. Sprinkle with grated parmesean.
