Peanut and Soy Slaw
PEANUT AND SOY SLAW
Serves 4-6.
For the dressing:
6 tbs rice vinegar
6 tbs neutral vegetable oil, such as corn or canola
5 tbs crunchy peanut butter
3 tbs soy sauce
3 tbs packed brown sugar
6 cloves garlic, pressed
2" piece of ginger, minced or pressed
Whisk ingredients together and set aside.
For the slaw:
5 c thinly sliced green cabbage from one small head
5 c thinly sliced red cabbage from one small head
2 large yellow or red bell peppers, matchsticked
2 medium carrots, grated
Combine with the dressing and season with salt and pepper. Serve chilled.
