Quinoa and Carrots
QUINOA WITH CARROTS
Serves 6 as a side dish.
1.5 c quinoa
2 tbs olive oil
.5 c finely diced onion from 1 medium
.5 c finely diced peeled carrot from one large
2 garlic cloves, pressed
.5 tsp turmeric
2.5 c vegetable stock
Rinse and drain quinoa. Heat butter in a large saucepan over medium
heat. Add carrot and onion and cook, uncovered, until the vegetables
start to brown, about 10 min. Add garlic and stir 1 minute. Add
tumeric and stir until it begins to turn brown, about 30 seconds.
Add quinoa and stock and bring to a boil. Cover and summer until
the stock is absorbed, about 15 minutes. Fluff and let stand off
heat, covered for 10 minutes more.
