Romesco Sauce
ROMESCO SAUCE
Makes 1 cup.
1/3 c blanched whole or sliced almonds or toasted pine nuts
1 slice white bread, crust removed and bread torn into pieces
2 large garlic cloves
1/2 tsp red pepper flakes
1/2 c drained bottled roasted red peppers or 1 roasted red pepper, chopped
2 tbs red wine vinegar
1/4 c extra-virgin olive oil
1/2 tsp salt, or to taste
Grind almonds, bread, garlic and red pepper flakes in a food
processor. add roasted peppers, vinegar and puree, adding oil in a
slow stream. Season to taste.
