Serves 2.- 2
- 8 ounce, 1" thick steaks, Delmonico or New York strip
Rub steaks with 1/2 teaspoon salt on each side, let stand covered for 1 hour out of fridge, until room temperature.
Preheat oven to 300. Let stand at 300 for at least 10 minutes.
Heat a dry cast iron skillet on high until the seasoning just starts to smoke.
Place the steaks in the skillet and sear for 2 minutes. Flip the steaks and place the skillet in the oven, 5 minutes for rare.
Remove steaks from oven and skillet, let stand 5 minutes.
